Green Chile Beef Stew – GAPS friendly

I found a great recipe the other day and have decided to make it for dinner tomorrow.

Here is the recipe as sited at Nourished and Nurtured.  I made a few tweaks for us due to what I had on hand:

I know she said not to used canned chiles but that’s what I have.  Also, I work all day so I won’t be able to “flip” it.  Therefore, it is marinating tonight in my fridge.  The only other change I made was using lime juice instead of fresh limes…I didn’t have any on hand.

It sounds delish!

Graduation

I’ve been MIA this weekend. It was a LONG week.
On Friday evening my youngest daughter, Miss S, graduated from preschool. On Saturday evening my son, Chris, graduated from High School. I think I will need a few days to recover!

Split Pea Soup

I’m home from work early with a painful headache.  We have a busy evening ahead of us.  Tonight is my son, Chris’, Senior banquet.

So that means I need to feed everyone right on time and get back out the door to the banquet.

So I’ve chosen Split Pea Soup for tonights dinner.

I’ve cooked up some onions in butter, added a bit of garlic,  a bit of bacon,  added my split peas and lots of water.  After about an hour I add some chopped carrots.  Then I just cook it until the peas are nice and soft.  Just before serving I add some sea salt and pepper.

Tilapia Fish Cakes with Dill Sauce

I was craving something a little different today.  I ran in to a really good sale on frozen Tilapia last month.  I have two large boxes waiting in the freezer.  My goal is to get 6 meals out of it for us.  Feeding 10 of us is a stretch.  So I decided to make up something a little different:

I cooked up a 1/3 of a box of Tilapia until it flaked.  Then I put it in the mixer with 3 eggs, almond flour, fresh basil, dill, coconut oil,  fresh grated parmesan, some milk and grated calico cheese.  I mixed this up until it held the shape of a patty.  I buttered up my grill and cooked the patty’s until each side was crunchy and brown.

To make the Dill Sauce:

I melted 2 Tablespoon butter, added 2 Tablespoons fresh ground flour, 1 tsp of beef bullion, and 3/4 cup of water.  I brought this to a boil, stirring until nice and thick.  I pulled it off the heat and stirred in 3/4 cup of cream and about 1 Tablespoon of Dill Weed.

YUM!

Dinner Tonight

I’m really working on feeding my family better.

Tonight we are having homemade tomato soup, grilled cheese with homemade wheat bread and pickled garlic.  I am trying to use up some home canned tomatoes to use up and make room for this year’s crop.  The bread is made with fresh ground wheat.  I do not tolerate processed flour and flour products.  However, I seem to tolerate the fresh ground wheat.

Last year I purchased a Zojirushi bread machine.  It was probably one of the best purchases I have made in a while.  I used this bread machine A LOT.  I have Fibromyalgia so it’s hard for me to knead bread by hand without creating a lot of pain.

To DO Better

To DO better.  To BE better.

Jesus was a man of action.  Go.  Do.  Be.  Come with me.  Go out and do. Love, it’s an action.

Someone once told me that they found value in doing nothing.  I disagree.  People see a need and they don’t respond.  Where is the value?  We see sad news reports and we think…gee, so sad.  Yet we take no action.  Conservative jump up and down against abortion, yet we look down our noses at single young mom’s.  We can’t have it both ways. 

Everyone has areas in their lives that can be better.  We should be encouraging each other to do better.

I am a mom of 8…why?  To DO better.  Most of my children came with trauma, drug and alcohol effects, abuse, special needs and other negative impacts.  Yet, they are not victims – they are suvivors.  I want to raise them to DO better.  I was in foster care as a child…my parents were unable to do better.  I have every excuse to repeat the pattern but I also have 8 very good reasons to DO better.
